Default Face Detection

Question for those in the know - on cameras such as 5Diii or 7Dii or 70D does face detection work when using the optical viewfinder, or only in live view mode?

On my 5D ii it is only when using LiveView.
BTW when using optical VF, you really have no way to see the bracket for the Face Detection so I see no real good reason why you should use that mode and hope to have a face blindly detected.

I am fairly sure that it is only available in live view AF. When using the view finder and standard AF the camera can only lock focus on one of the AF points, in live view using contrast detect AF it can lock focus anywhere within the frame (you would need this for face detect to work).
