The best book I've found for bird photograph is:
The Handbook of Bird Photography 1st Edition by Markus Varesvuo , Jari Peltomaki, Bence Mate The authors are Finns and all the examples are European or Mediterranean, so relevant to you. Lots of explicit details as well as good stories about the challenges.
